Based on my recent experience with Smart Switch, it doesn’t copy everything from an old Samsung phone to a new Samsung phone. A lot of secured items such as passwords do not get copied over. Is this correct or did I do something wrong last time?

Yes is correct. Thats why its best to do clean install.
Yes, this is correct. For passwords, you’ll need to save them into Samsung Pass or Google’s version. Many app sign ins, especially Credit card/banking apps will require logging in again.
