I have a gaming pc with a 4090 in the other room. I never really stream to the deck, but I’m wondering if that’s how I should be playing the games all the time?

I would recommend it. I stream my desktop using Moonlight/Sunshine. If there’s any latency it’s imperceptible, but that will entirely depend on your internet strength and speeds (desktop is Ethernet 1Gbps, steam deck is over 5Ghz WiFi 1Gbps).
I regularly stream my desktop while elsewhere, so don’t even need to be on the same Wi-Fi connection to get the same stability and video quality. Think I get <10ms latency from network while being 30 miles from my desktop, but I’d have to check (YMMV). Will need to see how it works once my LE OLED comes in later, but doubt it’d be any worse.
