Due to prior Christmas horror stories of other consoles spending all day updating and all the recent posts about the OS update, do I need to open the gift before wrapping them? Do I need to log them in to update the SteamDecks?

Not worth it IMHO. By the time Christmas comes around there may be more updates released and more importantly you may ruin the “brand new unboxing experience”.
I’d only do it if the unwrapping would take place somwhere with no access to high speed Internet for several hours and want the kids (or whomever) to start playing on the new the Deck immediately, but in that case they would need to download some games anyway.
Nah, half the fun is breaking the seals don’t deprive someone else of the unboxing
