I’m not sure of any program that connects with the Apple Watch, but I do know about Airpods, although I don’t have Airpods so I cannot really help on things like its feature set.
There is a program that is being maintained called CAPod, which is a Free and Open Source Software (FOSS) that connects with Airpods ranging from 1st Gen to Pro.
If you want faster updates, you might want to use F-Droid, which acts like an app store for FOSS software. It’s gonna take Google for a while to review and approve new updates. F-Droid’s own app might not appeal to you, so you can use F-Droid clients like Droid-ify.
Anyways, that was a bit of an unnecessary tangent about F-Droid, just use the Play Store release of CAPod to not get too much hassled.
