The one I’ve enjoyed the most so far has to be Bayonetta. Locked 60 fps at maxed out graphic settings and it supports 800p. Obviously, I guess, since it’s over 15 years old but it’s an amazing action game if you don’t hate combat. It’s very arcady and entrancing.

I think the “new” player UI (tvOS 15?) is very unintuitive. Very difficult to change subtitles and audio track. In the older UI you would just swipe down. It was clear and consistent.
