Is it possible for Global version to unlock bootloader unlike US version? Because as I understood, there is no way for US samsung to unlock now, so what about the global one?

The ‘global’ version sm-g998b allows bootloader unlocking unlike the versions intended for use in the US/Canada.

However, if unofficial content is detected with an unlocked bootloader, the Knox warranty bit trips, and Samsung Pay, Secure Folder, Samsung Health, Samsung Pass, MDM, and warranty are revoked even after returning to the fully official software.

For the best experience with cellular and warranty, the phone should ideally be one that’s intended for use in your location.

Exynos is your best choice if you wanna mess with it for fun like I’m planning on doing. I’ll probably Custom ROM it when I get another phone. A few years from now you will look back either in regret if you got the Snapdragon or happy if you chose the Exynos that your old phone is still working well in the latest OS version, although unofficial. My S7 Edge that I custom ROMed is still in use once in a while, which would just not happen had I gotten the Snapdragon. That’s why I personally willingly chose the Exynos variant.

Seems like. Earlier I preferred android phones for their customize ability over IPhones, but now it is sad to see that Samsung and other companies went the same way as Apple.
