Is there a way to choose where the games get installed? I prefer keeping my non steam stuff on sd cards.
Dos and Windows seem to be functional, but I cannot log into Epic as all the login options either fail to open the browser or get me stuck at captcha as the mouse cannot go to the bottom 1/4 of the screen.

I’d say 3+ usb ports so one of them can be used for an external drive, and 2 for m+k. No need to go top of the line with Valve’s official dock or something similar, personally I’ve been using the cheapest, most generic dock that I could find and it has been serving me well for like 18 months.
You CAN run almost anything so you most likely will never need Windows, but some apps just don’t work, even with proton/bottles/etc. There are workarounds for stuff like other game launchers or Xbox Game Pass, but they don’t work perfectly.
Personally I recommend installing Windows To Go on an external ssd if you ever need to run something that you can’t use on Linux.
Mine arrived at the same time as yours and had issues with both the battery and the m.2 port, Valve did an rma for it a few months ago. If you’re in the EU, then you have 2 years of warranty instead of 1.
I would start off with trying to recalibrate the battery, but since it’s probably impossible in your case then just make sure none of the internal connectors came off, then try Steam Support again if that’s not the case.
