If you value a slight boost to portability and no fans/noise the air. If you value some extra ports and a higher refresh rate the pro.
I use my MacBook more heavily than you and I chose the m2 air, for what it’s worth

I would get a dell XPS but with 16GB of RAM. If you’re paying the difference and buying it yourself or can request they buy that one for you it’s worth it.
You will want a nice light portable option for WFH. Hauling the Alienware or larger laptop will suck.
Since it’s a work laptop I would rule out the Alienware regardless.
The dell docking station is great as well along with it. I have one for my work machine - though I recently moved to using a Personal device to connect to a virtual desktop using VMware horizon.

I’m not sure about that dock you mentioned but seems similar to the dell universal docks and those work too.
Maybe the HP dock needs displaylink software?
That said I have an m1 and m2 air and have used both methods above with both.
I have the MBA M2 and do the same stuff as you and it’s incredible.
If you need the ports get the MBP - but I love that the air has no fans and stays quiet. Had no issues in Lightroom or photoshop at all on my air.
I feel like sales would increase a little if the mini wasn’t so gimped compared to the heavier hitting models.
Also regular is 1st before the mini in that list
“Pro” means nothing besides it’s the flagship version of a product.

Other iPads are too large to comfortable use for most of what I want to do - and iPhone is a little small. The mini is just my preferred form factor and perfect for a tablet imo. If I wanted bigger, I’d use my MacBook Air
A lot of it centers around using two handed touch controls, or having it one handed to carry around.

Corporate laptops is the biggest space where they don’t have the market share that’s held by Lenovo, HP, and Dell and considering major corps will likely never exit Windows and Microsoft ecosystem they’re in a pretty good place.
The only way they’re going to get a lot more laptop share IMO would be a MacBook Air at a much lower price point (maybe they’ll keep selling M1s until they’re only $500?) and for their MacBook Pro to start being a competitive gaming machine - which may end up happening in the next decade
