Ace Combat!

Specifically 3 (PSX), and 4/5/Zero (PS2)

Just make sure you get the Japanese version with fan translation of Ace Combat 3, as it has more levels and a surprisingly robust branching storyline.

Ace Combat 4 and 5 run a little slow on PCSX2, but it you stay in first-person mode with Power Tools it’ll be mostly smooth sailing. Zero, however, runs great.
