It appears HDR support is broken for FF7R. It also appears that screen stretch doesn’t work neither.

More colour option should be doable. Not everyone is comfortable performing a four hours operation on their Deck.
If possible, a slimer Deck, but only if it doesn’t trade off structural integrity.
Aside. I think a 800p screen is fine because it contributes to battery life. Anything larger should keep a minimum of 2.5 hours battery life in mind.

Is it confirmed that the audio hissing problem is caused by the 200-1040 Mhz bug? One guy in this Steam thread speculated but without providing proof.

Workaround is to cap your GPU speed to 1600.
Atelier Ryza 3 receives up to 25% performance boost. On lowest settings at 720p and atelier-sync-fix, the game could perform around 40 FPS before. With SteamOS 3.5.5, it could reach 55-60 FPS.
Under the new update, 800p30 with both TAA and AO enabled can be achieved without upscaling. This is a big deal because the already tiny fonts would no longer be blurry.
Ivoler updated dock, still kicking and won’t replace it until it breaks.
If you have a PC / laptop, you can start transferring games to it (copy them to steamapps/common folder, then hit install in Steam, it would verify the game install for you). Then when your OLED Deck comes, just hit install for the games and have them transfer from your PC / laptop.
I really like what Valve has done with the new OLED 1TB model (it checks all my boxes) and I happen to have just enough disposable income, so I’m happy to give them more money (if they let me to) as a form of recognition. If I don’t manage to preorder one on Day 0, I would just hold on to my LCD Deck and patiently wait for Deck 2.
In my case, it’s Option 1 with Option 4 as a fallback.

Do you feel happier with 269 Euro in your pocket? If yes, buy the LCD version.
Otherwise buy the OLED version.
Compare to some other needs like water, food and shelter, you don’t need any Steam Deck to live.
But would I still buy an OLED Steam Deck given I already own a LCD Steam Deck and happy about it? If you have the disposable income and like what you are seeing in the new Deck (the various upgrades described in OP), I would go ahead and buy it. Since Valve listened to the community and engineered a product according to these input, they deserve a recognition.
This would hopefully send a message to the various companies in the industry that the money is here for you, but only if you listen and work diligently to deliver a products that consumers want. Monetization, microtransaction and other predatory practice are not.
